Great for using up ripe bananas, super quick and uses alot less sugar then some of the ones I have made.

3 ripe bananas
3/4 cup sugar
1 egg
1 cup S/R flour

Mash bananas and sugar together, mix in egg, then flour
pour into cake tin (linned or greased) bake on 190 until cooked (about 20min)

You can also add blueberries, nuts or choc chips

Enjoy!

  1. I would totally make this if I wasn’t allergic.

  2. Hi @ScrappyKat and @quietpurpletiger

I wonder if 3 or 4 carrots would work instead, or the same sort of volume of cooked pumpkin – they’re both sweet-ish and soggy. Maybe a bit of milk would be good with the carrots if the mix looked a bit dry: what do you think?

  3. What a good idea @Apples.

@ScrappyKat I have a really yummy healthy Carrot slice (that doesn’t taste healthy) I’ll upload for you :)

    Notes

I don’t suggest freezing this recipe as I think it may dry it out too much if you do.

**I coped that from the website. when I made it i left out the cinnamon and used more cream cheese for the icing**

  5. Ooh @quietpurpletiger, that looks great. Its not much fun being allergic to bananas, but I dont like the taste these days.
