Leftover recipes

Have been getting back to basics when it comes to using leftovers. Here are a few things I have been making using leftovers:

- Roasts: meat usally get used for sandwiches. Veggies can be used in: fried rice, quiche, cous cous salad

- Meat/mince: leftovers can be made into pies or sausage rolls, used for tacos

I have a basic quiche recipe that I am loving at the moment:

Puff pastry for the base
3 eggs
1 cup of milk
chesse on top once you have added your ingredients

- this is great with roast pumpkin, sweet potato, broccoli, onion and herbs from the garden but you can use any left overs you like :)
