Marvellous Marmalade

As part of the carbon challenge I have committed to eating seasonal and local food. So far so good! Am totally loving the goodness from my own no-dig garden which is producing plenty of great vegies and herbs.

While I was at the EPIC farmers market the other weekend I picked up 5kg of oranges for $5 – bargain! I stored them for a while until I worked out what to do with them… and the logical choice was… make MARMALADE!

After researching a bunch of different recipes I was a little overwhelmed by how much sugar was used. Not being a sweet tooth I have created a mish-mash of a bunch of different recipes and have come up with a totally DELICIOUS and very easy recipe. It goes a little like this:

1. Take a bunch of oranges
2. Cut the peel off with a knife
3. Cut up the insides into small bits
4. Cut the peel into little slithers (no more than a couple of mm wide)
5. Chuck it in a pot
6. Add in enough boiling water to cover the oranges (say, 6 cups)
7. Add in half the quantity of water in sugar (say, 3 cups)
8. Bring to the boil and let it bubble away for at least an hour (I ran out of time and ended up taking mine off the boil to sit overnight and returned the next day for more boiling action)

To see if the marmalade is ready, dolop a bit on a cold plate and tilt. If the marmalade runs down then it needs more boiling. If it stays in place – you’re ready to go!

Then you can chuck it in a bowl in the fridge, or into sterilised jars. Peasy! Have fun winning lots of cooking kudos with this little beauty :-)
